On this Sunday morning, I sit with my youngest along the back wall of her Sunday school class. She isn't ready to join in today. By the time I make it to church I'm pretty much exhausted & ready for some peace. Not these kids. They are ready to party 💃👏. As I reflect, I'm one again impressed with those who volunteer with our sweet children. Saints I say.

Vegan tacos. So delicious. Salsa: grilled corn, grilled red onion, cilantro & tomato (cumin, lime juice, salt sprinkled on top). Taco "meat": walnuts, garlic, cumin, chili powder & flakes in food processor. Fold into quinoa. Served on a large leaf of romaine & topped with avocado. #whatveganseat
